After the Doors Lock, Keebler Coffee Roasters Earns its Name

Toward the end of Commerce at the intersection with Florida, the old Roxy Theatre enjoys a placid locale. Even though it’s past the open hours, punctuated by the “Closed” sign and stowed chairs, Keebler Coffee Roasters is busy earning its name.

Despite the small workspace, Matt Keebler transforms the kitchen into a roastery. A timer, a computer with roasting information carefully monitored, measuring equipment — It is an orchestra of timing and method. Beans must be roasted within a meticulously controlled environment to achieve desired quality and consistency.
